Villa Sparina, Piedmont
This very bright, stylish Blancs de Blanc (Cortese) wine from the top Gavi producer in Piemonte is rather a revelation. Crisp and fresh but with a creamy intensity and round mouthfeel, it is very fine and delicate but has a persistence and complexity (apple pie crust, white fruits, twist of sweet spice) from being aged twice as long non vintage Champagne. The vinous equivalent of spun silk.
